Vinification :
  • Juice extraction : 50% by bleeding (from the red-wine vats) and 50% by pressing directly on arrival at the wine-house.
  • Clearing out cold (clearing the juices) : about 24 hours
  • Alcoholic fermentation : around 15 days at a constant 15░C.
  • No malo-lactic fermentation.
Organo-leptic characteristics of the 2016 vintage :
  • Alcoholic degree : about 13.
  • Colour : pale pink-salmon.
  • Aroma : floral notes with a citrus fruit touch.
  • On the palate : lively first impression, good retro-olfactory aroma persistence.
