The Vaudois Estate Red

SYRAH (80%) / GRENACHE (20%)
Vinification :
  • Vatting : separating the grains from the skins.
  • Cold maceration : about 24 hours with a rough 10% bleeding in order to elaborate the rosé.
  • Fermentation (after the maceration) : 20 to 25 days at a temperature never exceeding 28°C.
  • Malo-lactic fermentation : carried out at the end of the alcoholic fermentation, and generally on marc.
Organo-leptic characteristics of the 2012 vintage :
  • Alcoholic degree : about 14.
  • Colour : ruby-red.
  • Aroma : red fruit scents (bramble and raspberry) with a light touch of liquorice.
  • On the palate : candid first impression, young tannins present, wrapped and developing, spicy woody touch, long persistence.
 

Vigorous wines, plump and powerful, ripe red fruit aroma, matured in the Estate’s cellars. To accompany grilled meat or in non-spicy sauces.
