Vinification :
  • Juice extraction : pressed directly on arrival at the wine-house.
  • Clearing out cold (clearing the juices) : around 24 hours.
  • Alcoholic fermentation : 15 or so days in the vat at a constant 17° (heat pumps and flags)
  • No malo-lactic fermentation.
  • Breeding in casks : 4 months.
Organo-leptic characteristics of the vintage :
  • Alcoholic degree : around 13,5.
  • Colour : golden white, shiny.
  • Aroma : touch of apricot and slightly toasted.
  • On the palate : quite persistent with a dominating soft feel.
